Can I edit a process in the TEST or PRODUCTION stage?

No, editing is only allowed in the DEVELOPMENT stage. If you need to modify a process in PRODUCTION, locate its version in DEVELOPMENT, make changes, then publish it to TEST. After testing, you can move it to PRODUCTION.
